A reminder of late English summers and bramble hedgerows – just lovely.

- 350g blackberries
- 150g sugar
- Place the blackberries and sugar into a 1.5 litre sterilised jar. Pour over the gin, seal and swirl the jar until the sugar is dissolved.
- Store in a cool, dark place and swirl the jar everyday for a week, then let to settle for another
- After two weeks strain the gin through a sieve into bottles. Don’t throw away the blackberries – use them in a trifle or better still another cocktail.
